Nankhatai are a popular Indian shortbread made using ghee and semolina. These delicious biscuits melt-in-your-mouth and can be flavoured in an assortment of ways.

Ingredients

    • 120g Laila Self Raising Flour
    • 3 tbsp Laila Semolina Coarse
    • 120g Laila Pure Butter Ghee
    • 65g sugar
    • 1 tsp green cardamom, crushed
    • 2 tbsp almonds and pistachios, crushed

Method

    • In a bowl, beat sugar and ghee with an electric whisk until creamy & fluffy.
    • Slowly start folding in the self raising flour, semolina and crushed green cardamoms.
    • Mix gently to form a smooth doughy consistency. Leave this mixture in the fridge for 20 minutes.
    • After 20 minutes, scoop into 2-inch evenly sized balls and shape them into round pucks. Top with crushed nuts.
    • Preheat the oven to 180°C and bake the nankhatais for 15 minutes.
    • Once done, let these cool down and serve with freshly prepared masala tea alongside samosas or snacks of your choice.
