Nankhatai are a popular Indian shortbread made using ghee and semolina. These delicious biscuits melt-in-your-mouth and can be flavoured in an assortment of ways.

Ingredients
- 120g Laila Self Raising Flour
- 3 tbsp Laila Semolina Coarse
- 120g Laila Pure Butter Ghee
- 65g sugar
- 1 tsp green cardamom, crushed
- 2 tbsp almonds and pistachios, crushed
Method
- In a bowl, beat sugar and ghee with an electric whisk until creamy & fluffy.
- Slowly start folding in the self raising flour, semolina and crushed green cardamoms.
- Mix gently to form a smooth doughy consistency. Leave this mixture in the fridge for 20 minutes.
- After 20 minutes, scoop into 2-inch evenly sized balls and shape them into round pucks. Top with crushed nuts.
- Preheat the oven to 180°C and bake the nankhatais for 15 minutes.
- Once done, let these cool down and serve with freshly prepared masala tea alongside samosas or snacks of your choice.
